
Baked Eggplant Italiano

Ingredients
4 -6 small eggplants
3 Tbsp. olive oil
6 cloves garlic, thinly sliced
1 c. fresh basil leaves
2 c. spicy tomato sauce
1 c. grated mozzarella
freshly ground black pepper
¼ c. grated Parmesan cheese
Directions
- Preheat broiler. Slice eggplant thinly. Place on a baking sheet
and brush both sides with oil. Broil until light brown, turning once,
about 7 mins. per side.
- Preheat oven to 350 degrees. Coat a 9x13-inch pan with cooking spray.
Alternate layers of eggplants, garlic, basil, several spoonfuls of
sauce, mozzarella and pepper to taste. Repeat until all ingredients
have been used. Top with the Parmesan cheese.
- Bake for 30 mins, until bubbly and lightly browned.
