
Curried Winter Squash Soup

Ingredients
¼ c. butter
1 c. chopped onion
½ c. flour
3 c. vegetable broth
1 c. milk (optional)
2-3 crushed garlic cloves
1 tsp. curry
½ tsp. red pepper flakes
½ tsp. salt
¼ tsp. ground coriander
1 lb. winter squash, cooked & puréed
Directions
- Sauté butter, onion and garlic.
- Add curry, salt, coriander & red pepper flakes & cook for
1 minute.
- Add broth and boil uncovered for 15-20 minutes. Stir in squash and
milk. Cook for 5 minutes, or until heated through.
