Easy Apple-Pear Crisp

Ingredients

Nonstick cooking spray
1 ¼ c. all-purpose flour
1 c. packed light brown sugar
¾ c. old fashioned rolled oats
¾ c. coarsely chopped walnuts (optional)
scant ½ tsp. salt
¾ tsp. ground cinnamon
12 Tbsp. unsalted butter, melted & cooled
4 ½ c. peeled, cored and sliced medium-sized apples Granny Smith, Stayman, Greening, Newton Pippin, York or other tart apple)
3 ½ c. peeled cored and sliced pears
2 Tbsp. freshly squeezed lemon juice
½ tsp. finely grated lemon zest
2 tsp. peeled and finely minced fresh ginger root

Directions

  1. Adjust oven rack to the middle position and preheat oven to 375 degrees. Coat a 9”x13” baking dish with nonstick cooking spray.
  2. In a large bowl, combine the flour, sugar, oats, nuts, salt and cinnamon. Add the butter and stir until it is evenly incorporated and the mixture resembles clumps. Set aside.
  3. In a large bowl, toss together the apples, pears, lemon juice, zest and ginger. Add 1 c. of crumb mixture and toss to combine. Spread the mixture evenly in the baking dish.
  4. Sprinkle the remaining crumb mixture evenly over the top, using your fingertips to break up any large clumps. Bake for 35 – 45 minutes, until top is well browned and fruit is bubbly. Serve with whipped cream or ice cream.
