
Fancy Mashed Hubbard Squash

Ingredients
1 medium Hubbard (or substitute) squash
1 very ripe banana
¼ c. honey
1 egg separated
salt
1 tsp. honey, warmed
Directions
- Bake squash until fork tender, about 1 hour in 350 degree oven with ¼-inch
water in baking dish.
- Remove from shell and mash well. Add the banana, ¼ c. honey,
egg yolk, and pinch of salt. Beat until smooth.
- Preheat oven to 350 degrees. Scoop the squash into a greased 3-quart
ovenproof bowl until it almost reaches the top.
- Beat the egg white with a pinch of salt until foamy. Gradually add
the tsp of honey, beat until peaks form. With a spatula dipped into
cold water, spread the meringue in peaks on top of the squash, brining
it all the way to the edges of the bowl.
- Bake for 25 minutes until meringue browns.
