Fancy Mashed Hubbard Squash

From 500 Treasured Country Recipes

Ingredients

1 medium Hubbard (or substitute) squash
1 very ripe banana
¼ c. honey
1 egg separated
salt
1 tsp. honey, warmed

Directions

  1. Bake squash until fork tender, about 1 hour in 350 degree oven with ¼-inch water in baking dish.
  2. Remove from shell and mash well. Add the banana, ¼ c. honey, egg yolk, and pinch of salt. Beat until smooth.
  3. Preheat oven to 350 degrees. Scoop the squash into a greased 3-quart ovenproof bowl until it almost reaches the top.
  4. Beat the egg white with a pinch of salt until foamy. Gradually add the tsp of honey, beat until peaks form. With a spatula dipped into cold water, spread the meringue in peaks on top of the squash, brining it all the way to the edges of the bowl.
  5. Bake for 25 minutes until meringue browns.
