
Garlic Ginger Miso Soup with Braising Greens

This is a flu and cold killer!
Ingredients:
- 1/2 cup Miso paste (I like red Miso)
- Soba Noodles
- 3 garlic clove, sliced thin
- 1 Tbsp. minced fresh ginger (more if you like it spicier!)
- 2 qts water
- 2 Daikon radishes, sliced thick
- 3 big handfuls of braising greens, chopped into large pieces
- 1/2 block of firm tofu, cubed into 1/2 inch blocks
- Paprika
Directions:
- Saute garlic and ginger in bottom of souse pan add a few dashes of
paprika, when golden, not brown, add water.
- When boiling add Soba noodles while cooking then for 5-7 minutes
add Tofu, Daikon radish, and finally greens.
- Take off heat when noodles are properly cooked, let stand for a few
minutes.
- Now add Miso, dissolving it into the soup by stiring it, do not let
the miso boil. (Mito is a natural anti-oxidant and is a living thing,
so don't kill it by boiling it.
*** Please note, Miso paste and Soba Noodles can be bought at
your local health food stores or food co-op.
