Honey-Balsamic Roasted Acorn Squash

From Cooking Light Annual Recipes 2003

Don’t just use acorn squash to decorate your table…cook it! You won’t be disappointed.

Ingredients

2 Tbsp. balsamic vinegar
2 Tbsp. honey
½ tsp. salt
2 minced garlic cloves
2 cups peeled chopped acorn squash
1 cup chopped onion
2 Tbsp. chopped green onions.

Directions

Combine 2 Tbsp. balsamic vinegar, 2 Tbsp. honey, ½ tsp. salt, and 2 minced garlic cloves in a large bowl, stirring until honey dissolves. Add 2 cups peeled chopped acorn squash and 1 cup chopped onion, tossing to coat. Bake at 425 degrees for 25 minutes or until golden brown. Toss with 2 Tbsp. chopped green onions.
