
Parsley, Radicchio and Napa Cabbage Salad with Lemon Vinaigrette

Ingredients:
1 ½ Tbsp. fresh lemon juice
1 tsp. finely grated fresh lemon zest
¼ tsp. sugar
¼ tsp. salt
¼ tsp. black pepper
1/3 c. plus 1 Tbsp. olive oil
6 c. thinly sliced Napa cabbage (from 1 head)
4 ½ c. loosely packed fresh flat-leaf parsley leaves (3 large bunches)
2 c. thinly sliced radicchio
Directions:
- Whisk together juice, zest, sugar, salt and pepper until sugar is
dissolved. Add oil in a slow stream, whisking in until emulsified.
- Just before serving, toss cabbage, parsley and radicchio in a large
bowl with just enough dressing to coat. Season with salt and pepper.
**Note: You can reduce the amount of parsley and add some other fresh
herbs to change the taste.
