Roasted Beet, Blue cheese & Frisee salad

Ingredients:

3 c. chopped beats
3 cloves garlic, minced or chopped
olive oil
salt & pepper
1 ½ c. crumble blue cheese
1 head of Frisee, shredded by hand
balsamic vinaigrette dressing

Directions:

Toss together olive oil, garlic and chopped beets. Roast in baking pan until beets are softened. Remove from oven and cool slightly.

Toss together beets, Frisee & vinaigrette in a large bowl. Add crumbled blue cheese and toss lightly. Serve.
