Roasted Beet, Blue cheese & Frisee salad by Georgia O’Neal Ingredients: 3 c. chopped beats Directions: Toss together olive oil, garlic and chopped beets. Roast in baking pan until beets are softened. Remove from oven and cool slightly. Toss together beets, Frisee & vinaigrette in a large bowl. Add crumbled blue cheese and toss lightly. Serve.
