Roasted Tomato Vinaigrette

From The Foster’s Market Cookbook By Sara Foster

Ingredients

5 medium tomatoes, seeded & chopped
2 shallots, chopped
1/3 c. olive oil
2 tsp. salt
1 tsp. pepper
2 tsp. chopped fresh chives
1/3 c. white wine vinegar

Directions

  1. Preheat oven to 400 degrees.
  2. Toss the tomatoes, shallots and olive oil in a baking pan. Arrange tomatoes in 1 layer and roast 30 -40 mins until tomatoes are slightly brown and skins begin to shrivel. Remove from the oven, reserving the oil in the pan; cool slightly.
  3. Place the salt, pepper, chives, vinegar, tomatoes, shallots and oil from roasting pan in a bowl. Whisk until well blended and all oil is incorporated.
