Roasted Yellow Pepper Bruschetta

Ingredients:
1 c. diced, seeded plum tomatoes
1/3 c. thinly sliced fresh basil leaves
1 Tbsp. balsamic vinegar
5 Tbsp. olive oil
2 large yellow bell peppers
4 ½-inch-slices country-style bread, cut into
5”x2 1./2 “ sized pieces.
1 3-oz. piece Asiago cheese, shaved into
strips
4 Tbsp. freshly grated Parmesan cheese

Directions:

  1. Blend first 3 ingredients and 3 Tbsp. oil in a small bowl. Season with salt & pepper.
  2. Char bell peppers over gass flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 mins. Peel, seed and slice peppers.
  3. Preheat oven to 375 degrees. Arrange bread slices on a baking sheet; brush with olive oil. Top bread with peppers and cheese shavings. Bake until cheese melts, about 12 mins. Transfer to plates and spoon on tomato topping. Sprinkle with Parmesan.
